Our very own Pub in the Park Host and food & drink extraordinaire Andy Clarke has given us a truly special gift this festive season - his very own Ginger Jingle Christmas Cocktail recipe!

Ginger Jungle (with Alcohol)

Serves Two

Ginger has many feathers to its cap – it’s invigorating, hot and yet feels comforting too. I love ginger as an addition to so many food and drink recipes. Here, I’m letting it take centre stage in a drink that will excite you throughout your winter celebrations. If you’d like a sweeter cocktail, add a teaspoon of ginger or gingerbread syrup to each glass, stir and serve.

Ingredient Proportions

6 parts ginger ale (or ginger beer if you like a fiery version)

2 parts dry white vermouth

1 part bourbon or whisky

1 part lime juice

Ingredients (with amounts)

2 handfuls of ice cubes

300ml/10fl oz ginger ale or ginger ale

100ml/4fl oz dry white vermouth

50ml/2fl oz bourbon or whisky

50ml/2fl oz fresh lime juice

To Garnish

10 frozen cranberries

  •
  •
  •
  •

Fine-mesh strainer

Two Collins or Highball Glasses

  •

1 Put a handful of ice cubes in a jug. Add the ginger ale, vermouth, bourbon and lime juice and stir gently.

2 Fill the glasses with ice, then strain in the cocktail into the glasses.

3 Add half the frozen cranberries to each drink and let them scatter throughout. These jewels of red will give the drink a festive look.

This is a great cocktail to have if you don’t fancy alcohol. The addition of non-alcoholic orange bitter and juniper sugar syrup adds a herbaceous kick and they compliments the ginger and lime perfectly.
