Twice Michelin-starred chef Atul Kochhar has changed the way people perceive and experience Indian cuisine. Taking inspiration from his native India, Atul continues to research and promote regional dishes, applying modern techniques to traditional Indian food and ingredients. He manages to combine his heritage with his love of provincial cuisine to create innovative modern food.

During lock down Atul has been filming a series of home recipe videos, giving you the chance to learn how to add some flair to your cooking. We’ve picked a couple of our favourites that we think you’ll love too.

Indian Street Food Style Eggy Bread

There’s no greater joy than being presented with a piping hot plate of eggy bread (or French toast, whatever you like to call it), wonderfully crispy and golden on the outside with a gorgeously soft centre. Whether you load it with fresh fruit, jams, bacon or syrup – we can all agree it just hits the spot. Check out Atul’s twist with spices, fried onion, tomatoes and chilli, it might just become your new go to.

Kerala Lamb Curry

We reckon this delicately spiced dish with marinated lamb will stop you yearning for your local takeaway. Super quick to rustle up but packed full of flavours, you won’t believe how simple it is. Inspired by a roadside café in Kerala, this is a proper curry.

Aloo Chaat

The ultimate street food snack – a potato salad like no other. Seriously crispy potatoes fried in ghee topped with tamarind, mint yoghurt and pomegranate seeds.
