As a born and bred Bristolian and culinary entrepreneur Josh is an incredibly active member of the city’s ever growing food scene.
Josh and his sister Holly Eggleton took over the 200 year old pub in 2006. Now recognised as one of the most exciting places to eat in the South West, The Pony & Trap was awarded a prestigious Michelin Star in 2011, an accolade which it still holds to this day. The Pony & Trap has also been named as one of the top five gastropubs in the country for the past three years, in the Estrella Top 50 Gastropubs awards.
Sustainability has always been high on Josh’s agenda and in the last year he has reflected this passion for local produce with the development of The Pony & Trap’s kitchen garden. Growing herbs, fruits and vegetables Josh and the have shortened their supply chain to a few steps. Josh is currently exploring how to take this further, with more soft fruit, veg and herbs being planted and purchasing the neighbouring field with the plan of creating a microfarm.
For three consecutive years Josh brought this passion for South West food to the masses with his appearances on the BBC’s Great British Menu. Competing with the likes of Dom Chapman, Emily Watkins, Jude Kereama and Chris Wheeler, Josh represented the best of South West produce while firmly placing himself in the public eye as one the country’s finest chefs.
In 2014 Josh founded Salt & Malt, a fish cafe and tearoom on the banks of Chew Valley Lake. Now famed for its gluten free fish and chips, the takeaway alone can serve hundreds if not thousands of covers across a summer weekend. This success has led to a second Salt & Malt in Bristol opening in 2017, when the perfect spot became available in a pair of shipping containers overlooking the harbourside at CARG0 2.
Always a lover of a Great British pub, Josh is also co-owner of the popular Bristol gastropub The Kensington Arms alongside Guy Newell, former MD of the Butcombe Brewery. Josh installed former Pony sous chef Luke Hawkins as head chef and Salt & Malt’s Ali Yuill as general manager. Little over 6 months after taking it over; The Kenny, as it’s locally known, was named one of the best pubs in the country, after it was named in the Estrella Top 50 Gastropubs 2017.
Josh is also the co-founder of the pop-up restaurant and food festival, Eat Drink Bristol Fashion and in 2012 co-founded the cafe, bar and bistro Yurt Lush. In 2017 Josh and the Eat Drink team created Root, a sustainable dining concept, putting vegetables at the heart of the menu for a small plate restaurant in the heart of Bristol’s Wapping Wharf. This restaurant reflects Josh and his chef team’s philosophy of eating more veg and less meat and promoting that fact through demonstrating what can be achieved with great British vegetables.
Josh is also a director of The Community Farm, an educational food hub just outside the city, a Caple brand ambassador and consultant for Bristol Sport providing insight and expertise for their corporate hospitality offering. Recently Josh joined the Board of the esteemed local brewery Bristol Beer Factory and has been a major consulting partner in the development of B Block, a major culinary re-development of the former Cadbury’s factory in Keynsham.
I would certainly say Pub in the Park is up there with one of best things I have ever done, the atmosphere and buzz over those 3 days was just electric and I felt so lucky to be a part of it all. All in all, we served around 4000 dishes over the 3 days, the most popular being the Mackerel Taco which sold out on each session, I couldn’t have asked for a better crowd though as they were all willing to try the other dishes we had to offer. One of my favourite moments had to be that I got to celebrate my birthday which was on the Sunday In such an incredible way, meeting a huge amount of kind and wonderful people as well as watching The Milk who are one of my favourite bands.
Wow - what an incredible, amazing weekend! The vibe was fantastic; the food was stunning, the music outstanding, but above all else, the people of Marlow made the whole event feel very special. It showed off our lovely town to all our visitors and the chefs from all over the country and did us proud.
