Our very good friend Stephen Terry is the chef / patron of The Hardwick, dubbed the best place to eat in Wales by Michel Roux Jnr.

We wanted to pick his brains to see if Christmas is different when you’re a world class chef.

 

What are you most looking forward to about Christmas?

Just simply spending two quality days (back in early on 27th!) with my family. There are 17 of us including in-laws etc. And I’m cooking! It’s a great day, good cheers good wine and exceptional nose bag!!

 

If you could only eat 3 Christmas foods for the rest of your life, what would you pick?

Sausage (in its many guises), Bacon (no brainer), proper banging bubble ‘n’ squeak (with a sneaky fried egg).

 

What’s your favourite Christmas memory?

Watching my Mum and Nans prep sprouts, spuds etc on Christmas morning as a young child and the smell of it already to serve!

 

What’s your best tip for Christmas leftovers?

A Christmas pasta Rotolo. A kind of rolled lasagne. Perfecto for Boxing Day.

 

What song is the soundtrack to your Christmas and why?

Rage against the machine – Killing in the Name Of. Just to make sure every one’s in the wide-awake club!!
