Philippine-born, Riddle & Finns Executive Head Chef Antonio Mercado started his culinary journey 14 years ago at Ritz Carlton Hotel in Dubai.
His passion for seafood and Japanese cuisine led him to work with celebrated restaurants such as Zuma Dubai, Nobu, Sosharu & Roka.
At Roka, Antonio spearheaded the opening of Mayfair and Aldwych as Head Sushi Chef and then became Executive Sous Chef before he joined the fantastic team at Riddle & Finns.
His thirst for the kitchen and enthusiasm to share his culinary expertise greatly inspired his big move from London to the most restaurant-vibrant city, the beautiful Brighton.
Antonio brings his passion for seafood and international expertise to the local catch of the south coast, holding true to the quality of produce at Riddle & Finns.
