Brindisa are a family owned restaurant group with a rich history, having a passion for bringing Spanish food to the UK.

Their founder, Monika Linton, was so inspired by stories of her father’s travels in Spain that she decided to learn the language and settle in Catalonia after university herself. After eight years in Spain Monika moved back home and brought knowledge of Spanish produce and dishes with her. At a dinner party in 1988, her brother Mark, who was now (and still is) living in Spain, brought a box of Spanish cheeses. Marvelling at the quality and memories this presented, they decided there and then to open up Brindisa as a Spanish food supplier. In 1998 this expanded into retail, after mastering the hospitality supplier trade, with our Borough Market warehouse being converted into a shop. In 2004 Monika was presented with an unexpected opportunity to take a corner site at Borough Market; an old potato warehouse. Bringing onboard Ratnesh Bagdai and his extensive hospitality background as Financial Director, and compiling a small but perfectly formed team, Monika created London’s first traditional, no-reservations tapas bar; a place to bring the true food and hospitality of Spain to London’s table.

Now 34 years on, Brindisa still carries the same values it was built on, having expanded now to six restaurants, as well as our Market Bar in Borough Market, and Brindisa retail shops in Balham and Borough Market.
